Grilled Oysters & Mignonette Compound Butter

Ingredients:

  • 1/4 cup finely diced shallots (about 2 shallots)

  • 1 teaspoon chopped (or dried) tarragon

  • 1 teaspoon of sugar or sweetener of choice

  • 3 tablespoons red wine vinegar

  • 1 stick (1/2 cup) salted butter, softened to room temperature

  • 1 tablespoon chopped fresh parsley

  • 1 teaspoon flaky salt

Instructions:

  1. Combine the finely diced shallots, tarragon, sugar and red wine vinegar- Let the mixture sit for at least 30 minutes, allowing the shallots to pickle while the butter softens to room temperature.

  2. After 30 minutes, strain the vinegar from the shallots and tarragon, and mix into the softened butter. Stir in the chopped parsley and flaky salt until evenly combined.

  3. Spoon the mignonette butter onto freshly shucked oysters and grill for 2 minutes until butter is bubbling. Remove from the grill and serve immediately. Finally, pair with Guinness.
